To us, sustainability doesn’t mean saying “no” – it means saying “yes” to new solutions and a different kind of environmentalism. We use our purchasing power as a restaurant to support suppliers who are using habitat-friendly fishing gear, supporting their local fishing communities and are consistently looking to improve their practices.
Our oceans are in a perilous condition due to years of overfishing and poor fishing practices, so we take what steps we can to remedy the issue. Our menu will not always be exactly the same – that’s because we serve what our fishermen catch and what our local farmers can bring. The essential characteristic of sustainability is flexibility, so as we learn more we change our behavior.
Our eco-friendly practices are merely a reflection of a deeper ideology: the two things than link every human on the planet are food and environment and we cannot live without either.
